4 Tbs olive oil
1 tsp salt
1 tsp black pepper
1 Tbs parsley, chopped
1 Tbs curly parsley, chopped
1 Tbs parmesan, shredded

- Cut carrots into long strips. Toss with olive oil, salt and pepper. Spread carrots in single layer on baking sheet.
- Bake for 20 to 25 minutes, or until carrots are cooked through and golden.
- Sprinkle with chopped herbs and parmesan.
